Favorite Gluten Free Recipes

Finding recipes that work gluten free can be difficult. I thought that it would be great to start by sharing what some of our favorite gluten free recipes are.

My favorite recipe is...
Chocolate Sheet Cake

2 c. Authentic Foods Multi Blend Flour
2 c. sugar
Mix together in large mixing bowl.

1 stick oleo
1/2 c. shortening
3 TBSP cocoa
1 c. water
Bring to boil. Pour over flour and sugar, mix well.
Add 1/2 c. buttermilk, 1 tsp. vanilla, 1 tsp. cinnamon, 1/4 tsp. salt, 1 tsp. soda, 2 eggs.
Mix well. Pour in a 15 1/2 x 10 1/2 x 1 pan. Bake 20 minutes at 400 degrees.

Five minutes before the cake is done, combine and bring to boil:
1 stick oleo
3 TBSP cocoa
5 TBSP milk

remove from heat and add 1 tsp. vanilla, 1 c. nuts, 1 box powdered sugar.
Beat smooth an spread over cake while hot.


This is my great-grandma's recipe and I encourage you to write down your favorite recipes and maybe even try mine.

Thanks for setting up this blog site. Hopefully it will be a good way for us all to communicate with each other.

Another favorite recipe of ours was created (modified to be GF) by Sondra, our younger daughter.

Chicken and Rice Casserole

3 cups rice
1 cup chicken broth
1 can cream of mushroom (we use Health Valley brand)
1 can cream of chicken (Health Valley Brand)
1 bag frozen peas & carrots
1 tsp salt
Stir this all together in 9x13 baking dish
Layer 6 Chicken Breasts on top
Top with Crumbled Velveeta Cheese.

Bake for 1 hour at 350 degrees, let stand 5 minutes before serving.
